Amritsar-born Vikas Khanna, a Michelin star chef and owner, is undoubtedly the face of Indian cuisine on the international scene today. Last year, Vikas launched his 1,200-page cookbook, Utsav, which features dishes prepared during different festivals in India. The book took him more than 12 years to complete. Vikas hasn’t had it easy.
